Can't build a plane without a shop, tools, tables, compressed air, and so on.  Well, I suppose you could, but a good shop is a blessing.  I am lucky enough to have a large building area.  Click on the main title above to go to this or any other content specific picture album.  There you can get a quick sense of the shop's development. 

You will need at least three tables to build an RV-10:   one to be your main bench, and this should be the largest. Two others at a minimum to be your primary work area. These can be the EAA-1000 benches, but if you go that route, I suggest you make them slightly different than their plans. I made two to their plans (the small benches in the photo) with only a slight modification, and they work fine.  

There are a few things I'd do differently, such as having a lip all the way around, but their plans are great for making two of these tables out of one sheet of plywood.  If you could, spend a bit extra and go for the lip, and thus use two sheets of plywood.  Or, stick to their original dimensions.  Just make the frame 2 inches narrower.  I don't think doing so would hurt the stability of the benches, and you'd get a nice lip. One thing you'll need in your shop is light. If you're working in a garage, basement, shop or hanger, make sure you have plenty of overhead lighting. I began working in my basement and installed as many florescent fixtures as possible, and it proved to be a real boon.  

Another is compressed air. Unless you plan to paint your own plane, you don't need anything other than the typical whatever. Just make sure it's oiled.  Going oil-less will drive you nuts from the noise. The most air you'll use is with the grinder and that's not used that much. Spray painting is also a hog, but if it's contained to priming, then I wouldn't spring for a large upright tank.

Tools at the ready.  I think that the best of my purchases is a rolling tool chest. If you can get one, do so. I am constantly rolling this thing right up to the tables, placing tools on its top, retrieving tools, even placing my tripod on it to get some shots of the project.
